Kiwicha Cookies

These cookies are a healthy option, as they are free from gluten, flours, sugar, and refined oils. Additionally, their mild flavor allows you to customize them with nuts, raisins, chocolate chips, or an 80% chocolate coating.

 

Ingredients:

– 110 grams of rolled oats

– 60 grams of honey

– 30 grams of popped kiwicha

– 70 grams of butter

– 3 grams of baking powder

– 2 eggs

– Ground cinnamon to taste

 

Preparation:

  1. Pulse the rolled oats until you get a fine powder, you can do this in a blender or food processor. Set aside.
  2. Soften the butter at room temperature by beating it with an electric mixer until smooth. Add the honey and continue beating for a few minutes.
  3. Incorporate the eggs one at a time, at room temperature, beating at maximum speed until they are integrated into the butter and honey mixture.
  4. Add the oat powder, popped kiwicha, and baking powder to the butter and egg mixture. Mix at low speed until a uniform dough forms.
  5. Optionally, add ground cinnamon or cocoa powder to flavor the cookies.
  6. Refrigerate the dough for 30 minutes to make it easier to handle. Then, shape the cookies by hand or using an ice cream scoop.
  7. Place the cookies on a tray lined with a silicone mat or parchment paper, leaving enough space between each one.
  8. Refrigerate the tray for another 30 minutes before baking.
  9. Bake the cookies at 180°C for about 20 minutes or until golden brown.
  10. Remove from the oven and let cool before enjoying them. They will taste better if you eat them while still warm and crispy!
