Maria Luisa Cake

Ingredients:

– Icing sugar (as needed)

– 6 eggs

– 1 ½ teaspoons baking powder

– 175 g unsalted butter

– 250 ml fruit jam

– 1 ½ tablespoons lemon zest

– 200 g granulated sugar

– 250 g plain flour

– 125 ml orange juice

 

Preparation:

  1. Preheat the oven to 180°C (350°F).
  2. Lightly grease two 20 cm round cake tins. Line the bottoms with parchment paper and dust the sides with flour, removing any excess.
  3. Sift the flour, granulated sugar, and baking powder into a large bowl.
  4. Add the lemon zest and butter. Mix with electric beaters (or in a stand mixer with the whisk attachment) on medium-low speed until you achieve a sandy texture with no large lumps of butter.
  5. Incorporate the eggs and mix on low speed until combined. Then increase the speed to medium and mix until the batter is smooth, thick, and pale in colour, about 90 seconds.
  6. Add the orange juice and mix until well incorporated.
  7. Divide the batter evenly between the two tins and smooth the tops with a spatula. Bake for 30 to 35 minutes, or until a skewer inserted into the centre of the cakes comes out clean.
  8. Allow the cakes to cool in the tins for 15 minutes, then turn them out onto a wire rack to cool completely.
  9. To assemble the cake, loosen the jam and spread it over one of the cooled layers. Place the second cake layer on top and dust with icing sugar.
