Piri Piri Crispy Oyster Mushrooms with Wheat Noodles and Chipotle Sauce

Ingredients:

1 red chilli

220 g oyster mushrooms

1 teaspoon smoked paprika

35 g chipotle paste

2 spring onions

1 lemon

2 medium nests of wheat noodles

1 carrot

2 garlic cloves

1 red onion

0.3 cup seasoned flour

Salt to taste

Oil for frying

1-2 tablespoons vinegar

1-2 tablespoons soy sauce

 

Method:

Prepare the ingredients:

  1. Wash and slice the red chilli into thin rounds.
  2. Clean the oyster mushrooms and cut them into smaller pieces if they are too large.
  3. Peel and grate the carrot.
  4. Peel and finely chop the garlic cloves.
  5. Peel and dice the red onion into small cubes.
  6. Slice the spring onions thinly.
  7. Squeeze the lemon to extract the juice.

1- Cook the wheat noodles: Cook the wheat noodles in salted water according to the package instructions. Drain and set aside.

2- Prepare the Piri Piri dressing:

  1. In a small bowl, mix the smoked paprika, chipotle paste, vinegar, soy sauce, and lemon juice. Adjust the salt to taste.
  2. In a large frying pan, heat enough oil for frying over medium-high heat.
  3. Dredge the oyster mushrooms in the seasoned flour and fry them in the hot oil until golden and crispy. Remove with a slotted spoon and place on absorbent paper to remove excess oil.

3- Stir-fry:

  1. In the same pan, add a little more oil if needed. Sauté the garlic and red onion until golden.
  2. Add the red chilli and grated carrot, and cook for a few minutes until the vegetables are tender.
  3. Add the fried oyster mushrooms to the pan with the sautéed vegetables and mix well.
  4. Add the cooked wheat noodles and stir again to combine all the flavours.
