This delightful Easter dessert is made with egg yolks, butter, ground almonds, and dried fruits like raisins or candied fruit. Traditionally prepared on Good Friday, it is blessed by a priest before Easter Sunday night. With raisins soaked in brandy, almond liqueur in the sponge, and a powdered sugar glaze, this treat is a feast for the senses.
Ingredients
- 400 g (3 1/4 cups) strong flour
- 140 g (2/3 cup) warm milk
- 100 g (7 tbsp) softened butter
- 2 medium eggs
- 100 g (1/2 cup) sugar
- 8 g (2 tsp) fresh yeast
- 20 ml (1 tbsp) rum
- 1/2 tsp vanilla essence
- 35 g (1/4 cup) sultanas
- 35 g (1/4 cup) slivered or chopped almonds
- 35 g (1/4 cup) candied orange or other fruit
- A pinch of salt
- Glaze
- 115 g (1 cup) powdered sugar
- 20 g (1 1/2 tbsp) egg whites
- 4 drops of vinegar
Instructions
- In a small bowl, dissolve the fresh yeast in the warm milk. Add 1 tablespoon of sugar and let it sit for about 10 minutes until it begins to bubble.
- In a large bowl, combine the flour, sugar, and salt. Make a well in the center and add the yeast mixture, eggs, vanilla essence, rum, and butter. Knead until the dough is smooth and elastic.
- Mix in the sultanas, almonds, and finely chopped candied fruit. Cover the dough and let it rise in a warm place for an hour.
- Preheat the oven to 180°C (350°F). Pour the dough into a tall, greased mold (a panettone mold works best). Bake for 30-40 minutes, or until a skewer inserted into the center comes out clean.
- For the glaze, beat the egg whites with powdered sugar and vinegar until thick and glossy.
- Once the Koulitch has cooled, coat it with the glaze and allow it to set before serving.
