Turkey with Cheese Sauce

Ingredients:

  • 600 g turkey tenderloin
  • 300 g fresh spinach
  • 4 carrots
  • 1 spring onion
  • 2 tablespoons light cream cheese
  • 2 slices light Havarti cheese
  • 1 sprig of thyme
  • Black pepper
  • 100 ml unsalted chicken broth
  • 80 ml white wine
  • Olive oil

 

Preparation:

  • Peel the carrots. Slice two of them thinly lengthwise and blanch them in boiling water for a few minutes.
  • Chop the other two carrots and boil them in water with a pinch of salt for 20 minutes. Drain and set aside.

  • Chop the spring onion and sauté it in a pan with 2 tablespoons of olive oil over medium heat.
  • Add the white wine and chicken broth, allowing it to reduce for a few minutes.

  • Add the cooked carrots, cream cheese, and slices of Havarti cheese. Cook until the mixture thickens.
  • Blend the sauce and pass it through a fine strainer to achieve a smooth texture.
  • In a pan with a few drops of oil, sauté the carrot slices along with the spinach.

  • Sprinkle with black pepper and thyme to enhance the flavor.
  • Slice the turkey tenderloin into thick slices. Season with pepper and grill them on a hot grill with a few drops of olive oil. Cook for 3 minutes on each side until golden and juicy.

  • Serve the turkey slices with the sautéed vegetables.
  • Drizzle with the hot cheese sauce and garnish with a sprig of thyme for an extra visual touch.
