Carrot cake is a delicious dessert that combines the natural sweetness of carrots with a soft and fluffy texture. This dessert originated in Europe during World War II when sugar was scarce, and carrots were an excellent substitute.
Ingredients:
- 2 cups of grated carrots
- 1 cup of sugar
- 1 cup of oil
- 3 eggs
- 2 cups of flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of ground cinnamon
- 1/2 cup of walnuts (optional)
Preparation:
- Preheat the oven to 180°C (350°F).
- Beat the eggs with the sugar and oil.
- Add the grated carrots, flour, baking powder, cinnamon, and walnuts.
- Mix well until you have a smooth batter.
- Pour the mixture into a greased pan and bake for 40 minutes or until a toothpick inserted comes out clean. Serve cold.
