A light yet flavorful dinner, where juicy chicken combines with the citrusy touch of lemon and flavorful vegetables.
Ingredients:
- 2 chicken breasts
- 2 lemons
- 2 garlic cloves
- 1 tablespoon of honey
- 3 tablespoons of olive oil
- Salt, pepper, and herbes de Provence to taste
- 1 red bell pepper
- 1 zucchini
- 1 red onion
- 1 carrot
Preparation:
- Mix the lemon juice, chopped garlic, honey, olive oil, salt, pepper, and herbs. Marinate the chicken breasts in this mixture for 30 minutes.
- Preheat the oven to 200°C (390°F).
- Cut the vegetables into medium-sized pieces and place them on a baking tray. Drizzle with olive oil, salt, and pepper.
- Place the chicken breasts on top of the vegetables and bake for 25-30 minutes or until the chicken is golden and cooked through.
- Serve the chicken with the roasted vegetables and, if desired, pair with rice or quinoa.
