Lemon Chicken with Roasted Vegetables

A light yet flavorful dinner, where juicy chicken combines with the citrusy touch of lemon and flavorful vegetables.

Ingredients:

  • 2 chicken breasts
  • 2 lemons
  • 2 garlic cloves
  • 1 tablespoon of honey
  • 3 tablespoons of olive oil
  • Salt, pepper, and herbes de Provence to taste
  • 1 red bell pepper
  • 1 zucchini
  • 1 red onion
  • 1 carrot

Preparation:

  • Mix the lemon juice, chopped garlic, honey, olive oil, salt, pepper, and herbs. Marinate the chicken breasts in this mixture for 30 minutes.
  • Preheat the oven to 200°C (390°F).
  • Cut the vegetables into medium-sized pieces and place them on a baking tray. Drizzle with olive oil, salt, and pepper.
  • Place the chicken breasts on top of the vegetables and bake for 25-30 minutes or until the chicken is golden and cooked through.
  • Serve the chicken with the roasted vegetables and, if desired, pair with rice or quinoa.
