Almond Mug Cake

Ingredients:

  • 1 ripe banana
  • 1 tablespoon almond milk
  • 1 small egg (size S or M)
  • 1 tablespoon 100% almond butter
  • 25 g flour
  • ΒΌ teaspoon baking powder
  • 1 ounce dark chocolate (over 70%)
  • A pinch of salt

Method:

  • In a coffee mug, mash the ripe banana thoroughly with a fork until smooth.
  • Add the tablespoon of almond milk and the egg to the banana puree. Mix with the fork or a small whisk until well combined.
  • Add the tablespoon of almond butter, the pinch of salt, flour, and baking powder. Stir until the mixture is smooth and well combined.
  • Break the ounce of dark chocolate into small pieces and gently fold them into the mixture.
  • Cook in the microwave on full power for approximately 2 minutes. Adjust the time according to your microwave’s power and the desired texture; the cake should be firm to the touch but still moist in the centre.

Let it cool for a couple of minutes before enjoying. You can serve it with a bit more almond butter or fresh fruit if desired.
