Asparagus Tart

The asparagus tart combines fresh and sophisticated flavors with an irresistible texture, making it perfect for a special lunch or a light dinner. With an easy-to-make homemade crust and a creamy filling, it’s a delicious option that everyone will love.

Ingredients

For the crust:

  • 250g all-purpose flour
  • 1 tsp fine salt
  • 50ml water
  • 80ml olive oil

For the filling:

  • 1 bunch green asparagus
  • 200g fontina cheese
  • 3 eggs
  • ½ cup cream
  • ¼ cup milk
  • ½ tsp fine salt
  • Pepper, to taste
  • 100g smoked bacon

 

Preparation

Crust:

  • Mix the flour and salt in a bowl, create a well, and add the water and olive oil.
  • Combine the liquids with your hands, incorporate the dry ingredients, and knead until the dough is smooth.
  • Refrigerate for 1 hour.

Filling:

  • Cook the asparagus in salted water for 1 minute, then stop the cooking by placing them in ice water. Drain and pat dry.
  • In a bowl, whisk together the eggs, cream, milk, salt, pepper, and grated cheese.

Assembly:

  • Roll out the dough and line a greased rectangular pan, covering both the base and edges. Pierce with a fork and prebake at 180°C (350°F) for 10 minutes.
  • Pour the egg mixture into the crust, arrange the asparagus, and distribute strips of bacon on top.
  • Bake for another 30 minutes, until the filling is golden and firm.

Ready to enjoy! Serve warm or at room temperature, and pair it with a fresh salad.
