Ingredients:
For the Dough:
- Flour: 350 grams
- Salt: 30 grams
- Sugar: 50 grams
- Oil: a splash
- Water: between 180 and 230 cm³
- Yeast: 15 grams
For the Filling:
- Salmon: 300 grams
- Soy sauce: a splash
- Honey: 1 teaspoon
- Salt: to taste
- Sesame oil: 1/2 teaspoon
- Pickled onions: to taste
- Chopped coriander: to taste
- Black sesame seeds: to taste
Preparation:
Prepare the Dough:
- In a mixer with a dough hook, combine the flour, salt, sugar, and oil. Gradually add a bit of water to start forming the dough.
- Add the yeast and continue incorporating water gradually while kneading until the desired texture is achieved.
- Transfer the dough to an oiled surface and knead by hand until smooth.
- Roll the dough out by hand into a rectangular shape about 2 cm high. Place the dough on a baking tray lined with oiled parchment paper.
- Leave the dough to rest for 2 hours.
Shape the Buns:
- Brush the dough with a little oil and cut out 8 cm diameter circles using a ring or cutter.
- Place each circle on a square of oiled parchment paper, folding the paper to form a semicircle without pressing too hard.
- Leave to rest for 40 minutes.
- Place the buns, with the parchment paper underneath, in a bamboo steamer and steam for approximately 10 minutes.
Prepare the Filling:
- In a hot pan with oil, sauté the cubed salmon with salt until well sealed.
- Deglaze with soy sauce and honey, cook for 1 minute, and remove from heat.
- Add sesame oil and let it cool slightly.
Assemble the Bao Buns:
- Open the steamed bao buns and fill them with the sautéed salmon.
- Add pickled onions, coriander leaves, and black sesame seeds to taste.
