Ingredients:
1 cup Brown Rice
¼ cup butter
1 onion, thinly sliced
½ green pepper, diced
2 cups stewed tomatoes, with juice
salt and freshly ground black pepper, to taste
1 cup water
Preparation:
- Heat the butter, margarine, or oil in a saucepan. Add the onion, green pepper, and rice. Cook over high heat until the rice is lightly toasted.
- Add the tomatoes, water, salt, and pepper, stirring until thoroughly combined. Bring the mixture to a boil, cover, and reduce the heat. Simmer for 30 minutes. Serve.
Tip: If you want to enjoy a heartier one-dish recipe, combine the brown rice with shredded chicken, beef, or shredded pork. If you wish to keep this dish as a vegetarian alternative, add black beans, chickpeas, or any other plant-based meat substitute.
