Brown Rice Spanish Style

Ingredients:

1 cup Brown Rice

¼ cup butter

1 onion, thinly sliced

½ green pepper, diced

2 cups stewed tomatoes, with juice

salt and freshly ground black pepper, to taste

1 cup water

 

 

Preparation:

  1. Heat the butter, margarine, or oil in a saucepan. Add the onion, green pepper, and rice. Cook over high heat until the rice is lightly toasted.
  2. Add the tomatoes, water, salt, and pepper, stirring until thoroughly combined. Bring the mixture to a boil, cover, and reduce the heat. Simmer for 30 minutes. Serve.

 

Tip: If you want to enjoy a heartier one-dish recipe, combine the brown rice with shredded chicken, beef, or shredded pork. If you wish to keep this dish as a vegetarian alternative, add black beans, chickpeas, or any other plant-based meat substitute.
