Coffee Pudding

Ingredients:

  • 100 millilitres of water
  • 2 or 3 shots of coffee
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 280 grams of sugar
  • 100 millilitres of oil
  • 150 millilitres of milk
  • 180 grams of plain flour (00 grade)
  • 60 grams of cocoa powder
  • 2 teaspoons of baking powder

Preparation:

  • In a bowl, combine the eggs, sugar, and vanilla extract. Beat until you achieve a smooth and frothy consistency.
  • Add the oil and milk to the previous mixture and mix again until well combined.

  • Incorporate the coffee, flour, baking powder, and cocoa powder. Mix well to avoid lumps.
  • Preheat the oven to 180 degrees Celsius. Meanwhile, prepare a greased and floured baking tin.
  • Pour the pudding batter into the tin and bake for approximately one hour, or until a skewer inserted into the centre comes out clean.

Allow to cool slightly before removing from the tin. Ready to enjoy!
