These cookies are a healthy option, as they are free from gluten, flours, sugar, and refined oils. Additionally, their mild flavor allows you to customize them with nuts, raisins, chocolate chips, or an 80% chocolate coating.
Ingredients:
– 110 grams of rolled oats
– 60 grams of honey
– 30 grams of popped kiwicha
– 70 grams of butter
– 3 grams of baking powder
– 2 eggs
– Ground cinnamon to taste
Preparation:
- Pulse the rolled oats until you get a fine powder, you can do this in a blender or food processor. Set aside.
- Soften the butter at room temperature by beating it with an electric mixer until smooth. Add the honey and continue beating for a few minutes.
- Incorporate the eggs one at a time, at room temperature, beating at maximum speed until they are integrated into the butter and honey mixture.
- Add the oat powder, popped kiwicha, and baking powder to the butter and egg mixture. Mix at low speed until a uniform dough forms.
- Optionally, add ground cinnamon or cocoa powder to flavor the cookies.
- Refrigerate the dough for 30 minutes to make it easier to handle. Then, shape the cookies by hand or using an ice cream scoop.
- Place the cookies on a tray lined with a silicone mat or parchment paper, leaving enough space between each one.
- Refrigerate the tray for another 30 minutes before baking.
- Bake the cookies at 180°C for about 20 minutes or until golden brown.
- Remove from the oven and let cool before enjoying them. They will taste better if you eat them while still warm and crispy!
