Swiss Chard Fritters

Ingredients:

– 1/2 bunch of Swiss chard

– 2 eggs

– 100 ml milk

– 100 g grated cheese

– Salt and pepper to taste

– Flour (as needed)

For serving:

– Sriracha sauce

– Lemon wedges

 

Preparation:

  1. Remove the stems from the Swiss chard and set them aside for another use. Slice the leaves into thin strips and set aside.
  2. In a large bowl, mix the flour with the eggs until you have a smooth, lump-free batter. Add the milk and mix well.
  3. Add half of the remaining flour, the grated cheese, salt, and pepper. Mix thoroughly to combine. Finally, fold in the sliced Swiss chard leaves until they are well coated with the batter.
  4. Heat oil in a pan over medium-high heat. Using two spoons, form portions of the mixture and carefully place them into the hot oil. Fry until golden brown on one side, then flip and cook until crispy and golden on both sides.
  5. Remove the fritters from the oil and place them on paper towels to drain excess fat. Serve hot with Sriracha sauce and lemon wedges.
