Vegetable Wraps

Ingredients:

2 tablespoons mayonnaise

2 tablespoons fresh chopped coriander

1 carrot, julienned

1 courgette, julienned

2 cups cooked chickpeas

1 teaspoon Vegetable Stock

1 tablespoon olive oil

4 wholemeal flour tortillas

4 leaves of romaine lettuce

 

Preparation:

1. Combine mayonnaise with chopped coriander and set aside.

2. Mix together the carrot, courgette, and chickpeas. Season with KnorrĀ® Vegetable Stock and olive oil.

3. Warm the tortillas and spread the mayonnaise mixture onto them, then place a lettuce leaf and some of the vegetable mix on top.

4. Fold to form the wrap and serve!
