World Recipe: Acarajé

Acarajé is a deep-fried black-eyed pea fritter cooked in dendê (palm oil), a staple of Bahian cuisine with African influences.

Ingredients:

  • 200 g soaked and peeled black-eyed peas
  • 1 chopped onion
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Palm oil (dendê) for frying

Preparation:

  • Blend the black-eyed peas and onion into a thick paste.
  • Add salt and pepper, mixing well.
  • Shape into small portions and deep-fry in hot palm oil until golden brown.
  • Serve with vatapá (a creamy shrimp and coconut paste) or with spicy sauce.

Acarajé is a symbol of Bahian street food and can be found in vendor stalls throughout Salvador.
