Acarajé is a deep-fried black-eyed pea fritter cooked in dendê (palm oil), a staple of Bahian cuisine with African influences.
Ingredients:
- 200 g soaked and peeled black-eyed peas
- 1 chopped onion
- 1 teaspoon salt
- 1 teaspoon pepper
- Palm oil (dendê) for frying
Preparation:
- Blend the black-eyed peas and onion into a thick paste.
- Add salt and pepper, mixing well.
- Shape into small portions and deep-fry in hot palm oil until golden brown.
- Serve with vatapá (a creamy shrimp and coconut paste) or with spicy sauce.
Acarajé is a symbol of Bahian street food and can be found in vendor stalls throughout Salvador.
