World Recipe: Pupusas

Pupusas are thick corn tortillas stuffed with cheese, beans, or pork cracklings. They are El Salvador’s national dish and trace their roots back to the Indigenous Pipil cuisine.

Ingredients:

  • 2 cups corn flour
  • 1 cup water
  • 1 cup grated cheese
  • ½ cup refried beans (optional)
  • Salt to taste

Preparation:

  • Mix the flour with water and salt until you get a soft dough.
  • Form balls, flatten them, and fill with cheese or beans.
  • Seal and flatten into a tortilla shape.
  • Cook on a hot griddle until golden on both sides.
