World Recipe: Thai Fish Cake

Thai Fish Cakes are a delicious traditional Thai recipe. These fish patties, especially seasoned with fresh herbs and spices like cilantro, tender garlic, and sesame, offer a unique combination of flavors that will transport you to the coasts of Thailand. An ideal option as an appetizer or main dish, paired with a refreshing lime mayonnaise.

Ingredients

  • 180 grams of haddock
  • 30 grams of tender garlic
  • 1 egg
  • 20 grams of cornstarch (refined corn flour)
  • 10 drops of fish sauce
  • 5 grams of sesame oil
  • 10 grams of sesame seeds
  • Fresh cilantro
  • Salt and pepper to taste
  • Olive oil (for frying)

Preparation

  • Cut the haddock into small cubes. Slice the tender garlic diagonally and julienne the cilantro.
  • In a large bowl, combine the cornstarch, sesame oil, fish sauce, and egg. Whisk everything together until the mixture is smooth. Add the tender garlic, sesame seeds, fish, cilantro, and season with salt and pepper to taste. Mix well.

  • Heat a splash of oil in a pan over medium heat. Place a round pastry cutter in the pan and fill it with a portion of the mixture (it’s recommended to make them thin so they cook better). Once the mixture starts to set, remove the cutter and flip the patty. Cook for about 2 minutes on each side until golden and cooked through.
  • Place the Thai Fish Cakes on a plate and serve with mixed lettuce leaves. For an extra touch of freshness, serve with lime mayonnaise.
