World Recipe: Pierogi

Pierogi are one of the most iconic dishes in Polish cuisine. These small stuffed dumplings, which can be filled with a variety of ingredients, are perfect for sharing with family or friends. Here’s how to make the classic version filled with potato, onion, and bacon.

Ingredients

For the dough:

  • 350 g all-purpose wheat flour
  • 1 egg
  • A pinch of salt
  • 150 ml water

For the filling:

  • 3 medium potatoes
  • 1 onion
  • 40 ml mild olive oil
  • 100 g salted pork belly or bacon
  • 150 g farmer’s cheese or feta cheese
  • Salt to taste
  • 40 g butter
  • Sour cream or Greek yogurt for serving

Preparation

  • Sift the flour and mix with the egg, salt, and water gradually until you get a smooth, homogeneous dough. Let it rest in the fridge for one hour.
  • Cook the potatoes with their skin on for 30 minutes, drain, and let them cool slightly. Chop and sauté the onion in oil, drain, and set aside. Cut and toast the bacon, drain, and also set aside.
  • Mix the mashed potatoes with the onion and bacon, reserving some for garnish. Add the farmer’s cheese or feta and mix well.

  • Roll out the dough and cut into circles. Place the filling in the center of each, seal the edges forming half-moons, and dust with flour.
  • Boil water in a pot and cook the pierogi until they float. Drain and sauté them in butter.

Serve garnished with the reserved onion and bacon, accompanied by sour cream or Greek yogurt. A traditional delicacy to enjoy!
