World Recipe: Medovik Cake

From Russia comes the Medovik Cake, the classic honey cake that layers large homemade honey cookies with a creamy mixture of cream cheese and yogurt, all topped with crushed cookies. An irresistible dessert that wins over everyone with its flavor and texture.

Ingredients:

550 g flour

120 g butter

125 g sugar

85 g honey

2 eggs

2 teaspoons baking powder

For the cream:

400 g natural yogurt

400 g cream cheese

100 g powdered sugar

Instructions:

  1. Sift the flour into a bowl. Beat the eggs with sugar, then add the honey and chopped butter.
  2. Melt the butter in a double boiler, stirring constantly. Add the baking powder and mix.
  3. Add the sifted flour and knead until a smooth dough forms. Cover with plastic wrap and refrigerate for 1 hour.
  4. Prepare the cream: beat cream cheese, yogurt, and powdered sugar until combined. Keep chilled.
  5. Divide the dough into 8–10 portions. Roll each portion between two sheets of parchment paper to 2 mm thickness. Mark the mold and bake at 180 °C (356 °F) for 5 minutes.
  6. Crush the leftover dough to decorate the cake.
  7. Assemble: alternate layers of cookie and cream on a plate, cover the top and sides with cream, sprinkle with crushed cookie, and press lightly.
  8. Refrigerate overnight so the cookies soften and the flavors meld.
