World Recipe: Poffertjes

Originally from the Netherlands, poffertjes are small, fluffy mini pancakes that are a much-loved part of Dutch cuisine. With centuries of tradition behind them, these bite-sized treats are cooked in a special pan with shallow moulds and are traditionally served with butter and icing sugar. Today, they are enjoyed at food markets and festivals around the world, appreciated for their light texture and gently sweet flavour.

Ingredients:

  • 100 g buckwheat flour
  • 100 g plain wheat flour
  • 1 teaspoon baking powder
  • 300 ml warm milk
  • 1 egg
  • 2 tablespoons sugar
  • 40 g butter

For serving:

  • Icing sugar
  • Melted butter

Preparation steps:

In a bowl, whisk the egg with the sugar until well combined.

Sift the flours and add them gradually, alternating with the warm milk and stirring gently. Add the baking powder and melted butter, then continue mixing until you have a smooth batter.

Heat a poffertjes pan or a pan with small moulds and pour a small amount of batter into each cavity, without filling it to the top.

Cook for about 4 minutes, turn each poffertje using two spoons or tongs, and cook for another 4 minutes until golden.

Once ready, let them cool slightly and serve with melted butter and a light dusting of icing sugar on top.

Enjoy these poffertjes for breakfast, as a snack, or even as a dessert — a sweet way to travel the world through flavour, right from your own kitchen.
