Yogurt Mousse with Red Berries

Ingredients

  • 250 g Greek yogurt
  • 150 g liquid cream (heavy cream)
  • 2 egg whites
  • 50 g powdered sugar (icing sugar)
  • 50 g strawberry jam
  • 10 g water
  • 1.5 gelatin sheets
  • Red berries
  • Fresh mint leaves

Preparation

  • Soak the gelatin sheets in a bowl with cold water for 10 minutes. Meanwhile, mix the Greek yogurt with the powdered sugar until a smooth, lump-free cream is obtained.
  • Separate 50 ml of cream and heat it in the microwave for about 30 seconds. Drain the gelatin well, dissolve it in the hot cream, and let it cool slightly for a few minutes. Add a couple of tablespoons of yogurt to this mixture and stir until combined. Incorporate everything into the yogurt bowl and mix again.
  • Whip the rest of the cream, which must be very cold, until firm. Add it to the yogurt gradually, with gentle, enveloping movements.
  • Whip the egg whites to stiff peaks and add them carefully as well, maintaining the airy texture of the mousse.
  • Fill the glasses three-quarters full and let them rest in the refrigerator for an hour for the mousse to set.
  • Mix the jam with the water and strain it through a sieve to obtain a thin sauce.

Spread it over the mousse, add the red berries, and decorate with fresh mint leaves before serving.
