Martinique Chicken is a Caribbean-inspired dish associated with Jamaica, where cuisine is known for its blend of sweet and savory flavors, influenced by tropical ingredients such as fruits, spices, and rum.

Ingredients:
1 whole chicken (about 1.5 kg), cut into pieces
4 tablespoons lemon juice
1 pineapple (about 1 kg)
100 g breadcrumbs
2 tablespoons oil
50 g raisins
3 tablespoons rum
125 g peeled tomatoes
250 g rice
Saffron
75 g butter
2 oranges

Preparation:
Cut the chicken into 8 pieces, season with salt, and drizzle with lemon juice. Cover and let marinate for 1 hour.
Peel the pineapple, slice it, remove the core, and cut into small pieces. Coat them in breadcrumbs, pressing well.
Brown the chicken pieces in a pan with hot oil.
Add the raisins, peeled and deseeded tomatoes, and rum. Cover and cook over low heat for 20 minutes.
Cook the rice in salted water with saffron.

Peel the oranges, removing the white pith, and slice them.
Brown the pineapple pieces in butter until lightly caramelized.
Drain the rice and place it on a serving dish. Arrange the chicken, pineapple, and orange slices on top.
Pour the chicken cooking juices over everything and serve immediately.
