Katmer Poğaça is a traditional Turkish preparation known for its layered dough, achieved through a technique of folding and stacking. This type of pastry is part of Turkey’s rich culinary tradition, where laminated doughs are popular in both sweet and savory versions.

Ingredients
500 g flour
100 ml oil
220 ml milk or water
9 g fine salt
7 g (1 packet) dry yeast
1 tablespoon sugar
Butter or oil for brushing the layers

Preparation:
Dissolve the yeast in part of the milk or water.
In a bowl, mix the flour, oil, milk or water, salt, dissolved yeast, and sugar until a smooth and soft dough forms.
Cover the dough with a cloth and let it rest until it doubles in size.
Divide the dough into eight equal parts and roll each one into thin discs.

Stack the discs, brushing each layer with melted butter or oil. Then roll out again and cut into eight triangles, like pizza slices.
Slightly stretch each triangle, add filling if desired, and roll into a crescent shape, tucking the tip underneath.
Brush with milk or water and let rest for another 30 minutes.
Bake in a preheated oven at 200 °C, then immediately reduce to 180 °C.
Cook for about 20 minutes or until golden brown.
