Homemade Chicken Ramen

With an aromatic broth, well-seasoned chicken, udon noodles, and a citrus touch of lime, you will create the perfect dish to enjoy at any time. Ingredients

  • 250 g chicken breast
  • 150 g udon noodles
  • 800 ml water
  • Chicken stock
  • 2 garlic cloves
  • ½ piece of ginger
  • Soy sauce to taste
  • Sweet soy sauce to taste
  • Thai spice mix
  • Chilli flakes to taste
  • 2 eggs
  • 1 lime
  • 2 tablespoons olive oil
  • ½ tablespoon butter (optional)
  • Salt and pepper to taste

Preparation

  • Season the chicken breasts with the Thai spices, salt, and pepper. Heat a drizzle of oil in a pot and cook the chicken until it is nicely golden on both sides. Remove and set aside.
  • Meanwhile, cook the eggs in boiling water with a pinch of salt for 11 to 12 minutes. Once ready, cool them, peel them, and cut them in half.
  • Grate the garlic and ginger. In the same pot, add a little more oil or the butter and sauté both ingredients until they release their aroma. Add the soy sauce, sweet soy sauce, chicken stock, and water. Cover the pot and bring it to a boil.
  • Once the broth is ready, add the udon noodles and cook for 2 minutes. Meanwhile, slice the chicken into strips.
  • Serve the broth and noodles in deep bowls. Place the chicken strips and egg halves on top. Finish with a few drops of lime juice, chopped spring onion, and chilli flakes to taste.
