Chana Masala is a traditional dish from India, especially popular in the northern regions of the country. This recipe is part of Indian cuisine and is known for its rich combination of spices, vegetables, and chickpeas. With its deep flavours and simple ingredients, Chana Masala has become a favourite dish around the world, enjoyed as a comforting vegetarian meal often served with rice or bread.

Ingredients
- 1 tablespoon extra virgin olive oil
- 2 tablespoons yellow onion, finely chopped
- 1 garlic clove, finely chopped
- 2 tablespoons curry powder
- 1 tablespoon tomato sauce
- 10 ounces chickpeas
- 2 teaspoons fresh lemon juice
- 1 teaspoon granulated stock
- 2 tablespoons red bell pepper, chopped
- ½ teaspoon ground black pepper

Preparation
- Heat the olive oil in a medium frying pan over medium heat. Add the onion and cook until it becomes slightly golden and soft.
- Add the garlic and curry powder, then cook gently while stirring frequently for about 2 minutes. This helps release the aroma of the spices and gives the dish a richer flavour.
- Add the tomato sauce, chickpeas, lemon juice, stock, chopped red bell pepper, and black pepper. Mix everything well until all the ingredients are combined.
- Allow the mixture to simmer over low heat, stirring occasionally, for about 10 minutes so the flavours can blend together and the chickpeas can absorb the seasoning.

Serve the Chana Masala warm over basmati rice or brown rice. This traditional Indian recipe is a simple yet flavourful dish, perfect for enjoying a nutritious meal full of spices and comforting aromas.
