Chocolate Profiteroles are a classic dessert from France, a country famous for its refined pastry traditions and elegant sweet creations. These small choux pastry balls are known for their light texture, creamy filling, and delicious chocolate topping. Over time, profiteroles have become a popular dessert around the world, loved for their beautiful presentation and the perfect combination of crispy pastry, smooth cream, and rich chocolate flavour.

Ingredients
- 1 cup water
- ½ cup (1 stick) butter or margarine
- 1 teaspoon granulated sugar
- ¼ teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- 2 to 2 ½ cups whipped cream
- 2 chocolate bars
- ¼ cup NESTLÉ Evaporated Milk
- Fresh fruit (optional)

Preparation
- Preheat the oven to 450°F. Spray two baking trays with non-stick cooking spray.
- In a medium saucepan, bring the water, butter, sugar, and salt to a boil. Add the flour and mix well until combined. Remove from the heat and allow the mixture to cool slightly. Add the eggs one at a time, beating well after each addition with a hand mixer.
- Place rounded spoonfuls of the dough onto the prepared baking trays. Bake for 15 minutes.
- Reduce the oven temperature to 325°F (160°C) and continue baking the profiteroles for another 20 to 25 minutes, or until they become lightly golden. Remove from the oven, cut off the tops, and set them aside. Remove any loose pieces of dough from inside to create space for the filling.
- For the chocolate sauce, place the chocolate and evaporated milk in a small saucepan. Cook over medium heat, stirring frequently, until the mixture begins to boil. Continue boiling while stirring constantly for 1 minute, or until the sauce becomes smooth and free of lumps.
- Fill the profiteroles with whipped cream using a piping bag or spoon. Place the tops back on, cover them with the chocolate sauce, and finish with fresh fruit if desired.
