06 Oct Blackberry and Chipotle Ice Lollies

Ingredients
- 3 cups blackberries
- White vinegar
- 4 tablespoons brown sugar
- 1 tablespoon chipotle chilli paste
- ½ cup water
- Aluminium foil
- Wooden lolly sticks

Method
- Wash and sanitise the blackberries. To do this, place them in water with vinegar, using 2 tablespoons of vinegar for every cup of water. Leave them to soak for 10 minutes, then drain them well.
- Set aside some of the blackberries and divide them between small shot glasses, filling each one about halfway.
- Place the remaining blackberries in a saucepan with the brown sugar. Cook over medium heat for about 20 minutes, until the fruit releases its juice.
- Remove from the heat and allow to cool slightly. Then transfer the mixture to a blender and add the chipotle chilli paste and water. Blend until smooth and well combined.
- Pour the mixture over the blackberry pieces in the glasses, filling them almost to the top.
- Cover each glass with aluminium foil and make a small hole in the centre. Insert the wooden lolly sticks through the holes and place the glasses in the freezer for at least 4 hours, or until the ice lollies are completely set.

To remove them from the glasses, dip each glass in warm water for a few seconds. This will help loosen the lolly slightly from the sides. Then gently pull on the stick to release the ice lolly.
