Carrot Pizza

If you’re looking for an original and nutritious way to enjoy pizza, the carrot-based version is perfect. Light, free of traditional flours, and very easy to make, it’s ideal for adding more veggies to your meals without giving up on flavor.

Ingredients
(for the base):

  • 200 g grated carrot (well drained)
  • 2 eggs
  • 5 tablespoons cornstarch
  • 1 tablespoon oregano
  • ½ teaspoon salt

(for the topping):

  • 60 g cream cheese or spreadable cheese
  • 1 tomato, sliced
  • Oregano to taste

Preparation:

  • In a bowl, mix the cornstarch with the grated carrot, oregano, and salt.
  • Add the beaten eggs and knead until you get a smooth mixture.

  • Spread the mixture onto a baking tray, forming a circle of the desired size.
  • Bake at medium heat for 10 minutes.
  • Remove from the oven, add the cream cheese and tomato slices on top of the base, sprinkle with oregano, and return to the oven until the cheese melts and the pizza is lightly golden.

Tips:

  • Drain the carrot well before using to prevent the base from becoming soggy.
  • You can add garlic powder or onion powder to the mixture to intensify the flavor.
  • Combine with other toppings: olives, fresh basil, or mushrooms.
