Pork Quesadillas with Goat Cheese

If you want to prepare a different, easy, and flavourful meal, these pork quesadillas with goat cheese are an excellent choice. The combination of golden-brown pork, juicy cherry tomatoes, caramelised onions, and the creamy touch of goat cheese creates an irresistible filling. Served with a fresh rocket salad, this is a complete dish that is perfect for sharing with family or enjoying on any occasion.

Ingredients

  • 6 wheat tortillas
  • 250 g minced pork
  • 1 log of goat cheese
  • 1 onion
  • 250 g cherry tomatoes
  • 50 g rocket leaves
  • 1 garlic clove
  • 4 tablespoons olive oil
  • 1 teaspoon sugar
  • 1 tablespoon vinegar
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 220 °C. Peel the onion, slice it into thin strips, and sauté it with a drizzle of oil and a pinch of salt for a few minutes. Add the sugar and cook over low heat until the onion becomes nicely caramelised. Set aside.
  • Using the same pan, cook the minced pork, breaking it apart with a spatula until it is golden brown. Season with salt and pepper to taste, then remove from the heat.
  • Cut the cherry tomatoes in half and grate the garlic. Sauté the garlic with a little oil, add the tomatoes, and cook until they begin to soften and release their juices. Add the pork back into the pan and mix well.
  • Crumble the goat cheese. Place the tortillas on a baking tray and spread the pork filling over one half of each tortilla. Add the goat cheese and caramelised onion.
  • Fold the tortillas, brush them with a little oil, and bake for 6 minutes or until golden and the cheese has melted.
  • For the salad, mix the vinegar with a drizzle of oil, salt, and pepper. Add the rocket leaves and toss well. 

Serve the freshly baked quesadillas with the fresh salad and enjoy a practical, creamy meal full of flavour.
