Scones with Mixed Berry Jam

Ingredients

For the scones:

  • 250 g all-purpose flour
  • 10 g baking powder
  • 50 g sugar
  • 1 pinch of salt
  • 80 g cold butter, cubed
  • 120 ml cold whole milk
  • 1 egg
  • 1 teaspoon vanilla extract (optional)

For the mixed berry jam:

  • 300 g mixed berries
  • 100 g sugar
  • 100 ml water
  • Juice of half a lemon

Instructions

  • Place the berries in an air fryer-safe dish, add the sugar, lemon juice, and water. Mix all the ingredients well.
  • Cook in the air fryer at 180 °C (350 °F) for 15–20 minutes, stirring halfway through, until the fruit is fully cooked.
  • Carefully remove and, while still warm, mash the berries with a fork to achieve a jam-like texture. If you prefer a smoother consistency, you can lightly blend and strain it. Let it cool.
  • In a large bowl, mix the flour, baking powder, sugar, and salt until well combined.
  • Add the cold butter and rub it in with your hands until you get a crumbly, sandy texture with small lumps. This step is key to achieving soft, fluffy scones.
  • Mix the milk with the egg and vanilla, then gradually add it to the dry ingredients. Stir gently until a dough forms, without overworking it.
  • Transfer the dough to a floured surface and gently flatten it to a thickness of 2–3 cm (about 1 inch).
  • Cut the scones into discs or triangles and place them on the air fryer tray lined with parchment paper.
  • Brush them with milk or beaten egg and cook at 170–180 °C (340–350 °F) for 10–12 minutes, until golden brown.

Let them cool for a few minutes on a rack, then split them in half and serve with the mixed berry jam.
