Stuffed Potatoes with Meat

Stuffed potatoes are one of those recipes that never disappoint. They combine simple ingredients, plenty of flavor, and a presentation that looks impressive on the table. Ingredients:

3 large potatoes

300 g (10.5 oz) ground pork and beef

1 onion

1 green bell pepper

2 garlic cloves

150 g tomato sauce

150 g grated cheese

Salt, to taste

Black pepper, to taste

Extra virgin olive oil

Instructions:

Place the potatoes in a pot with enough water to cover them and add a pinch of salt. Cook for about 40 minutes, or until they are tender when pierced with a fork.

While the potatoes are cooking, prepare the filling. In a skillet, heat a drizzle of extra virgin olive oil and sauté the finely chopped onion and garlic. Once they begin to turn golden, add the green bell pepper cut into small cubes and cook over medium heat for about five minutes.

Add the ground meat, season with salt and pepper to taste, and cook until nicely browned. Then add three tablespoons of tomato sauce, stir well, and set aside.

When the potatoes are ready, cut them in half lengthwise. Using a spoon, carefully scoop out part of the flesh to create potato boats. Arrange them on a baking tray.

Place the scooped-out potato flesh in a bowl and mash it lightly. Add the cooked meat mixture and stir until all the ingredients are well combined.

Spread a teaspoon of tomato sauce inside each potato boat, coating the surface evenly. Add a little grated cheese, then fill each potato with the potato-and-meat mixture.

Top generously with grated cheese to create an irresistible cheesy crust.

Place the potatoes in a preheated oven and bake until the cheese is completely melted and beautifully golden brown.

The result is a comforting dish with a creamy interior, a flavorful meat filling, and a perfectly gratinated topping. Whether served as a main course or as part of a family gathering, these stuffed potatoes are guaranteed to be a crowd-pleaser.
