World Recipe: Cannoli

Cannoli are one of the most iconic desserts in Italian pastry, especially from the region of Sicily. Their crispy fried shell filled with smooth ricotta cream makes this treat a true delight that wins over both kids and adults. Here’s how to prepare them at home.

Ingredients

For the dough:

  • 100 g wheat flour
  • 25 g semolina
  • 2 g unsweetened cocoa powder
  • 15 g white sugar
  • 15 g butter (at room temperature)
  • 40 g sweet Marsala wine
  • 20 g beaten egg

For frying: Sunflower oil

For the filling:

  • 250 g drained ricotta
  • 30 g powdered sugar

For decoration (optional):

  • 50 g chopped pistachios
  • Powdered sugar to taste

Preparation

  • Mix the dough ingredients until you have a smooth ball. Cover with plastic wrap and let rest in the fridge for 2 hours.
  • Then, roll out the dough thinly and cut into circles. Wrap each circle around a metal cannoli tube and brush the edge with beaten egg to seal.
  • Fry the cannoli in plenty of hot oil until golden. Drain on paper towels and, once cool, remove the metal mold.

  • Mix the ricotta with powdered sugar and fill the cannoli.
  • Decorate with chopped pistachios and a dusting of powdered sugar before serving.
