Originally from home-style Cypriot cooking, congrís is a simple yet characterful dish that brings together rice, beans, and sautéed vegetables. This preparation, found in many Mediterranean households, stands out for its balance of mild flavours and aromatic notes. It works perfectly as a side dish or as a main meal. The recipe uses basic ingredients, but when combined, they create a comforting texture and an irresistible aroma.

Ingredients:
1 can of beans
1 lb rice
2 garlic cloves
1 bell pepper
2 tbsp tomato
Salt to taste
Chopped parsley

Preparation:
Place the beans in a pot with water and bring them to a boil so they warm through and soften. Meanwhile, in a separate pan, sauté the tomato, bell pepper, and finely chopped garlic until fragrant and lightly golden.
Once both preparations are ready, combine them in a pot together with the previously washed rice. Mix well and cook over medium heat until all the liquid is absorbed and the rice is loose and tender.

To serve, plate the rice with the beans and sautéed vegetables, finishing with a touch of fresh parsley. This is a simple, nourishing dish full of Mediterranean tradition.
