Damper is a traditional rustic bread of early Australian settlers, who used to cook it over the fire during their travels. Today it’s baked and is perfect to accompany soups or spread with butter and honey.

Ingredients:
- 2 cups self-raising flour
- 1/2 tsp salt
- 1 tbsp cold butter
- 3/4 cup milk (can be plant-based)
- Extra flour for kneading

Preparation:
- In a bowl, mix the flour with salt. Add the butter and crumble with your fingers until you get a sandy texture.
- Add the milk and mix until a soft dough forms. Do not overknead.
- Shape into a ball, make a cross on top with a knife, and bake in a preheated oven at 180°C for 30-35 minutes, or until it sounds hollow when tapped on the bottom.
- Serve warm, ideally with a little butter and jam, just like they did in the Australian bush.
