World Recipe: Kiwi Coulis

From New Zealand, a land known for the quality and freshness of its kiwifruit, comes this vibrant and refreshing coulis. It is perfect for serving with desserts, cheesecakes and ice creams, or for adding a gourmet touch to sweet dishes. This coulis stands out for its bright colour, balanced acidity and smooth texture.

Ingredients:

  • 300 g kiwis
  • 30 g sugar
  • 30 ml water
  • Tapioca starch, as needed

Preparation:

  • Peel the kiwis and place them in a blender or food processor.
  • Separately, prepare a light syrup: heat the water and sugar until the sugar dissolves completely.
  • Add the hot syrup to the kiwis and blend until smooth. Strain the mixture and set aside.
  • To prepare the micri (a light gelatinous thickener), place the granulated tapioca starch in a saucepan, add cold water gradually and mix well.
  • Bring to the heat and cook until it boils and thickens. Blend, strain and allow to cool.
  • Add the cold micri to the kiwi coulis and blend gently until you reach the desired consistency.
