This delightful Mousse de Zapote comes from Ecuador, a South American country rich in tropical fruits and vibrant culinary traditions. Zapote, known for its naturally sweet and creamy pulp, is widely enjoyed in coastal and warm regions. This dessert highlights the fruit’s smooth texture and delicate flavour, transforming it into a light and refreshing treat perfect for family gatherings or special occasions.

Ingredients
- 2 kg fresh zapotes
- 1 litre fresh cream
- 4 egg whites
- 2 sachets unflavoured gelatine
- 1/2 pound sugar

Preparation
- Begin by washing, peeling and removing the seeds from the zapotes. Scoop out the pulp and place it in a large mixing bowl. Add the fresh cream and sugar, then beat everything together until you achieve a smooth and creamy mixture.
- In a separate bowl, whisk the egg whites until stiff peaks form. This step is important to give the mousse its light and airy texture.
- Dissolve the unflavoured gelatine in half a cup of warm water, stirring well to ensure it fully melts without lumps.
- Gently fold the whipped egg whites into the zapote and cream mixture. Add the dissolved gelatine and mix carefully until all ingredients are well incorporated, keeping the texture as light as possible.
- Pour the mixture into a large mould or individual serving cups. Refrigerate for several hours until the mousse is firm and thoroughly chilled.
