World Recipe: Mujaddara

Mujaddara is a traditional dish from Lebanese and Palestinian cuisine, known by different names such as mejadra, mudardara or myadra. Made with lentils, rice or bulgur, onions and spices, this ancestral recipe has spread across the world thanks to its deep flavour, high nutritional value and simplicity.

Ingredients:

  • 250 g lentils
  • 250 g rice
  • 2 onions
  • 2 sachets of saffron
  • 300 ml peanut oil
  • Salt to taste
  • Black pepper to taste

Preparation:

  • Rinse the lentils well to remove any impurities. Place them in a pot with boiling water and cook for about 30 minutes.
  • Meanwhile, roughly chop the onions. Add two handfuls of the chopped onion to the pot with the lentils, along with a pinch of salt and pepper.
  • After the 30 minutes, add the rice to the pot and pour in more water until the mixture is fully covered. Cover and cook for another 20 minutes.
  • In a frying pan, fry the remaining onions in hot oil until golden brown. Remove and drain on paper towels. Set aside.
  • Shortly before the rice and lentils finish cooking, add the saffron, dissolving it into the cooking liquid. Once most of the liquid has been absorbed, turn off the heat.

Serve the lentil and rice mixture hot, topped with the fried onions, and enjoy.
