Payagua Mascada is a traditional dish from Paraguay, with deep roots in the country’s indigenous Guaraní culture. Its name comes from the Guaraní people, and the recipe reflects the simplicity and richness of Paraguayan cuisine. Made with cassava and seasoned meat, this dish has become a beloved comfort food, usually enjoyed as a snack, appetiser, or part of family gatherings. Its crispy exterior and soft, flavourful filling make it a special recipe that represents Paraguay’s culinary heritage.

Ingredients
- 500 g minced beef
- 1 kg cassava (yuca)
- 2 garlic cloves, chopped or crushed
- 1 onion, finely diced
- 2 spring onions, chopped
- ½ teaspoon cumin
- 1 tablespoon black pepper (or to taste)
- 1 bay leaf (optional)
- Fresh parsley, chopped, to taste
- Salt to taste
- Vegetable oil or butter
- Flour

Preparation
- Heat two tablespoons of oil in a suitable-sized pot. Add the onion and garlic, then cook until the onion becomes soft and transparent.
- Add the minced beef, black pepper, and cumin. Stir well and cook until all the ingredients are fully combined. Add the spring onions and parsley, continuing to stir until the liquid from the mixture reduces. Set aside.
- Peel the cassava and cut it into medium-sized pieces. Place it in a pot, cover with water, add a pinch of salt and the bay leaf, then cook over medium heat for about 30 minutes or until the cassava becomes soft.
- Once cooked, drain the cassava and mash it like a puree. Mix it with the cooked meat until the mixture becomes smooth and well combined. Adjust the seasoning if needed.
- Using your hands, shape the mixture into small balls, then flatten them until they are about 1 cm thick and around 6 cm in diameter. Coat each piece evenly with flour and repeat until all the mixture is used.
- Heat plenty of oil in a frying pan and fry the payagua mascadas on both sides until golden and crispy. Drain them on paper towels and serve while still hot.
