World Recipe: Pierogi

Pierogi are boiled dumplings popular in Polish cuisine. They can be filled with potatoes and cheese, sauerkraut, meat, or even fruit. They are part of the culinary soul of Eastern Europe and an ideal way to gather the family in the kitchen.

Ingredients:

For the dough:

  • 2 cups flour
  • 1 egg
  • 1/2 cup water
  • 1 tsp salt

For the classic filling:

  • 3 medium potatoes
  • 150g ricotta cheese or curd cheese
  • Salt and pepper

Preparation:

  • Mix all the dough ingredients until a soft dough forms. Let rest for 20 minutes.
  • Boil the potatoes, mash them, and mix with cheese, salt, and pepper.

  • Roll out the dough and cut into circles. Place a teaspoon of filling in the center and fold like turnovers.
  • Boil in salted water until they float (about 5 minutes).

You can serve them like this or brown them in a pan with butter. They are amazing topped with sautéed onions.
