Samosas are one of the most popular appetizers in Indian cuisine, known for their crispy pastry and flavorful, spiced filling. Perfect to serve with fresh chutney or a spicy sauce, these delights are ideal for sharing.

Ingredients
For the dough:
- 300 g wheat flour
- 1 teaspoon cumin seeds
- 1 teaspoon nigella or black cumin seeds (optional)
- A pinch of salt
- 50 ml sunflower oil
- 150 ml water

For the filling:
- 4 potatoes (or 300 g mashed potatoes)
- 1 red chili
- 1 bunch fresh cilantro
- A small piece of fresh ginger
- 30 ml sunflower oil
- 1 tablespoon cumin seeds
- 1 tablespoon mustard seeds
- 1 tablespoon coriander seeds
- 1 teaspoon fennel seeds
- 150 g peas
- ½ teaspoon garam masala
- ½ teaspoon chili powder
- ½ tablespoon ground cumin
- Salt to taste
- Plenty of oil for frying

Preparation
- Mix the flour with cumin, nigella, salt, and oil. Gradually add water and knead until you have a firm dough. Cover and let it rest for 30 minutes.
- For the filling, boil the potatoes, peel, and mash them. In a wok, heat the oil, toast the seeds, and add the chili, ginger, and peas. Add the ground spices and potatoes. Season with salt and pepper, stir in the cilantro, and remove from heat.

- Divide the dough, form balls, roll into ovals, and cut in half. Shape into cones, fill, and seal into pyramids. Fry in hot oil until golden.

Serve the samosas hot with chutney or your favorite sauce. A journey of flavor in every bite!
