Char siu bao is a classic of Cantonese cuisine and a staple of dim sum. It is a soft steamed bun filled with seasoned pork featuring sweet and spiced notes, widely popular in southern China and Chinese communities around the world.

Ingredients:
150 g pork, cleaned and cut into semi-frozen cubes
100 g white cabbage, chopped and stem removed
40 g scallions
5 g fresh ginger, peeled
2 dried shiitake mushrooms, rehydrated and drained
½ tsp fine salt
¼ tsp ground black pepper
1 tsp soy sauce
1 tsp sugar
1 tsp oyster sauce
⅛ tsp five-spice powder
1 tbsp cornstarch
1 tsp sesame oil
Steamed buns (dough)
1100 g water

Preparation:
Finely chop the pork, cabbage, scallions, ginger, and shiitake mushrooms.
Mix with salt, pepper, soy sauce, sugar, oyster sauce, five-spice powder, cornstarch, and sesame oil until a uniform filling is formed. Let rest for 10 minutes.
Fill the dough discs, seal them, and place them in a steamer.
Bring the water to a boil, arrange the buns, and steam for 12 to 15 minutes, until fluffy and fully cooked. Serve hot.
