World Recipes: Mongolian Beef

Mongolian beef is a popular dish in Chinese-American cuisine. Although its name refers to Mongolia, its origins are associated with Chinese restaurants in the West, where Asian flavors were reinterpreted using bold sweet-and-savory sauces and quick stir-fry cooking techniques.

Ingredients

  • 500 g beef tenderloin
  • 20 g cornstarch
  • 90 g soy sauce
  • 30 g water
  • 30 g sake (optional)
  • 70 g oyster sauce
  • 1 tsp ground white pepper
  • 10 g sesame oil
  • 1 ½ tbsp sugar
  • 2 garlic cloves
  • 5 g ginger
  • 30 g vegetable oil
  • 50 g scallions

Preparation

  • Cut the beef into thin strips and toss with the cornstarch until lightly coated.
  • Finely chop the garlic, ginger, and scallions.
  • In a bowl, combine the soy sauce, water, sake, oyster sauce, sugar, white pepper, and sesame oil.
  • Heat the vegetable oil in a large skillet over high heat and sear the beef until browned; remove and set aside.
  • In the same skillet, sauté the garlic and ginger for a few seconds, return the beef to the pan, and add the sauce.
  • Cook until the sauce slightly thickens. Add the scallions, toss to combine, and serve immediately.
