12 Jul World Recipes: Sandkuchen
Among the traditional cakes of Central Europe, Sandkuchen holds a special place for its delicate texture and timeless simplicity. Originating in Austria, this beloved dessert takes its name from the German word sand, referring to the cake’s fine, crumbly texture that melts in the mouth. For generations, Sandkuchen has been a staple of family gatherings, afternoon coffee breaks, and festive celebrations, proving that the most memorable recipes are often the simplest.

Its popularity spread throughout Austria and neighboring German-speaking regions, where home bakers appreciated its rich buttery flavor and light consistency. Unlike elaborate pastries, Sandkuchen relies on a handful of pantry ingredients to create an elegant cake that pairs perfectly with coffee or tea.

Ingredients:
250 g butter
200 g sugar
Vanilla extract
4 eggs
1 small glass of rum
125 g sifted flour
125 g sifted cornstarch
1 teaspoon baking powder

Preparation:
Preheat the oven to 180°C (350°F). In a large bowl, beat the butter, sugar, vanilla extract, and rum until the mixture becomes light and fluffy. Add the eggs one at a time, beating well after each addition to ensure a smooth batter.

In a separate bowl, combine the sifted flour, cornstarch, and baking powder. Gradually add the dry ingredients to the butter mixture, stirring gently until fully incorporated.

Grease and flour a loaf pan. If needed, line it with parchment paper for easier removal. Pour the batter into the prepared pan and smooth the surface.

Bake for 45 to 60 minutes, depending on your oven, or until a toothpick inserted in the center comes out clean. Allow the cake to cool before unmolding and serving. The result is a tender, buttery cake with a delicate crumb and a rich flavor that has delighted Austrian households for centuries.
