Zapechonaya Treska, or baked cod, is a comforting dish that reflects the rich culinary traditions of Russia and Eastern Europe. The name Zapechonaya Treska simply means “baked cod” in Russian, but the dish is much more than its straightforward title suggests. The combination of flaky fish, creamy sauce, and vegetables results in a satisfying meal that balances simplicity with rich flavor.

Ingredients:

500 g cod

8 potatoes or tomatoes, sliced

2 cups cream

2 tablespoons butter

2 tablespoons chopped parsley

3 eggs

1 carrot

1 onion

Salt, to taste

Mixed vegetables, as desired

Preparation:

Soak the cod according to package instructions if using salted cod. Once ready, slice the fish and place it in a pot with water, the carrot, onion, and a pinch of salt. Simmer for about 15 minutes until the fish is tender.

Transfer the cod to a baking dish or ovenproof skillet. Add the sliced potatoes or tomatoes and sprinkle with the chopped parsley. Cook together for another 15 minutes to allow the flavors to combine.

In a bowl, whisk together the eggs and cream. Season lightly with salt and mix until smooth. Pour the mixture evenly over the cod and vegetables.

Dot with butter and bake in a preheated oven until the top is lightly golden and the custard-like mixture is set, about 30 minutes. Serve hot and enjoy a classic Russian comfort food that brings together simple ingredients in a rich and satisfying dish
