Luchi bread is a simple, thin and crispy preparation, ideal for serving with dishes featuring sauces and curries. It requires just a few ingredients and, although it involves several resting periods, the result is well worth it.

Ingredients
- 400 g plain flour
- 1 pinch of salt
- Water, as needed
- 2 tablespoons oil
- Oil for frying, as needed

Method
- In a bowl, mix the flour, salt, a splash of water and the 2 tablespoons of oil with a wooden spoon. Gradually add water until the dough comes away from the sides of the bowl.
- Transfer the dough to a clean work surface and knead by hand until you have a smooth ball that does not stick to the surface.
- Cover the dough and leave it to rest for 30 minutes to allow it to relax.
- Divide the dough into 12 portions and shape them into balls. Place them on a lightly oiled tray, brush each one with a little oil and leave them to rest for another 25 minutes.
- Grease the work surface and roll out each ball with a rolling pin until you have very thin, circular discs.
- Heat enough oil in a frying pan and fry each bread until it starts to brown. Turn it over and cook the other side until golden.

Remove and leave to drain off any excess oil.
