23 Dic Ginger Cookies
Ingredients:
125 g butter, at room temperature
125 g sugar
1 egg
2 tablespoons honey
4 teaspoons freshly grated ginger (or 2 tsp ground ginger)

1 teaspoon ground cinnamon
A pinch of salt
½ teaspoon nutmeg
200 g all-purpose flour
200 g self-rising flour
Royal icing for decoration (optional)

Preparation:
Cream the butter and sugar together until smooth. Add the egg and honey, and mix until fully combined.
Sift both flours together with the cinnamon, nutmeg, salt, and ginger. Add the dry mixture to the wet ingredients and mix until a manageable dough forms.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Roll out the dough to about 5 mm thick and cut out the cookies using your favorite cutters. Place them on a baking tray and chill for a few minutes.
Bake at 180°C for 10–12 minutes, or until the edges are lightly golden.
Let them cool on a wire rack before decorating with royal icing, if desired.
Store in an airtight container to keep their crisp texture and spiced aroma.
