Bami Goreng is one of Indonesia’s most popular dishes and a true classic of both street food and home cooking. It consists of noodles stir-fried in a wok with chicken, vegetables and bold sauces that balance sweet, salty and spicy flavours.

Ingredients:
- 1 lb fresh lo mein noodles
- 1 lb skinless, boneless chicken breast, cut into strips
- 2 tablespoons peanut oil
- 10 oz fresh bean sprouts
- 1 grated carrot
- 6 spring onions, chopped
- 16 oz napa cabbage, shredded
- 1/2 cup crispy fried onions
- 1/4 cup ketcap manis or dark soy sauce
- 1/2 cup water
- 1/4 cup Thai sweet chilli sauce
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1 tablespoon sambal oelek chilli paste

Preparation:
- Cook the noodles according to the package instructions, drain and set aside.
- In a bowl, mix the soy sauce, water, sweet chilli sauce and sambal oelek. Set aside.
- Heat the oil in a wok or large pan and cook the chicken until well browned.
- Add the garlic, ginger and vegetables, stir-frying until the cabbage softens slightly.
- Add the noodles and the sauce mixture, stirring well to combine all the flavours.

Serve hot and top each portion with crispy fried onions.
